Depending on the design and style, it is not necessary to have cabinets that are all the way to the ceiling. On average, most people can't even reach into those way upper cabinets without help of a step stool or ladder, especially if you have 10ft ceilings. 

See how they used Sheetrock to frame the upper cabinets in this kitchen. This is a nice way to make a comprise with a MODERN designed kitchen and has definitely inspired us!
